Ingredients

  • 4 plain English muffins
  • 4 breakfast sausage patties, about 2 ounces each
  • 4 large eggs
  • 4 slices American cheese
  • 1 tablespoon butter, for toasting

  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ⅛ teaspoon dried sage
  • ⅛ teaspoon smoked paprika, optional
  • Salt, to taste

Instructions

  1. Divide the breakfast sausage into four portions and shape each into a thin round patty slightly larger than the English muffins.
  2. Season the patties with black pepper, garlic powder, onion powder, sage, and smoked paprika if desired.
  3. Heat a nonstick skillet over medium heat. Cook the sausage patties for 3 to 4 minutes per side, or until browned and cooked through.
  4. Transfer the sausage patties to a plate and place one slice of American cheese on each hot patty.
  5. Split the English muffins and toast the cut sides in the skillet with a little butter until lightly golden and crisp.
  6. Add butter or oil to the skillet and cook the eggs over medium-low heat. Use an egg ring for a neat round shape if desired.
  7. Season the eggs lightly with salt and pepper. Cook until the whites are completely set, flipping briefly if preferred.
  8. Place a cheesy sausage patty on the bottom half of each toasted English muffin.
  9. Add one cooked egg on top of each sausage patty.
