Ingredients
For the Mashed Potatoes
- 2 pounds Yukon Gold or Russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- ½ cup whole milk, warmed
- ¼ cup heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Crispy Chicken
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Vegetable oil, for frying
For the Gravy
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
For Assembly
- 1½ cups sweet corn, cooked
- 1½ cups shredded sharp cheddar cheese
- Chopped fresh parsley (optional)
Instructions
- Boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain well and mash with butter, warm milk, heavy cream, salt, and pepper until smooth.
- Prepare the chicken by dipping each piece into beaten egg, then coating it in seasoned flour. Fry in hot oil until golden brown and fully cooked. Drain on paper towels.
- Make the gravy by melting butter in a saucepan. Whisk in the flour and cook for 1 minute. Slowly whisk in the chicken broth, Worcestershire sauce, and seasonings. Simmer until thickened.
- Cook the corn according to package directions or steam until tender.
- Assemble each bowl by adding mashed potatoes first, followed by corn and crispy chicken.
- Spoon the hot gravy over the chicken and potatoes.
- Sprinkle generously with shredded cheddar cheese and garnish with parsley if desired.
- Serve immediately while hot.

- Yukon Gold potatoes produce extra creamy mashed potatoes.
- Warm the milk before mixing it into the potatoes for the smoothest texture.
- Freshly shredded cheddar melts much better than pre-shredded cheese.
- Air-fry or bake the chicken for a lighter version.
