For the Chicken

- ½ teaspoon onion powder
- ¼ teaspoon white pepper
- ½ teaspoon granulated sugar
For Assembly
- 4 sesame seed burger buns
- 4 middle bun pieces (or extra bottom bun halves)
- 4 slices American cheese
- 2 cups shredded iceberg lettuce
- 16 dill pickle slices
Instructions
- Slice each chicken breast into two thin cutlets and marinate in seasoned buttermilk for at least 30 minutes.
- Mix the flour, cornstarch, and seasonings to make the crispy coating.
- Whisk together all sauce ingredients until smooth and refrigerate.
- Coat the marinated chicken in the flour mixture. For extra crispiness, double coat by dipping back into the buttermilk and flour.
- Heat vegetable oil to 350°F (175°C) and fry the chicken for 4 to 5 minutes per side until golden brown and fully cooked.
- Toast the sesame seed buns and middle bun pieces until lightly golden.
- Spread the special sauce on each bun layer, then add lettuce, crispy chicken, American cheese, pickles, and the middle bun.
- Finish with the top bun and serve immediately while hot and crispy.
