Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 12 oz angel hair pasta
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil (for sauce)
  • 6 garlic cloves, minced
  • 1 small red bell pepper, thinly sliced
  • 1 small yellow bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • ½ cup dry white wine or chicken broth
  • 1 cup low-sodium chicken broth
  • Juice of 1 large lemon
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • Lemon wedges, for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook the angel hair pasta until al dente. Reserve ½ cup pasta water before draining.
  2. Season the shrimp with salt, pepper, and Italian seasoning.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the shrimp for 1–2 minutes per side until pink. Remove and set aside.
  4. Melt the butter with the remaining olive oil in the same skillet. Add the garlic and cook for 30 seconds.
  5. Add the sliced bell peppers and onion. Sauté for 4–5 minutes until slightly tender.
  6. Pour in the white wine (or chicken broth) and simmer for 2 minutes.
  7. Stir in the chicken broth, lemon juice, lemon zest, Italian seasoning, and red pepper flakes. Simmer for 3–4 minutes.
  8. Return the shrimp to the skillet and toss gently.
  9. Add the cooked pasta and toss until evenly coated, adding reserved pasta water if needed.
  10. Sprinkle with Parmesan cheese and fresh parsley. Serve immediately with lemon wedges.

Notes

  • Do not overcook the shrimp, as they become rubbery very quickly.
  • Fresh lemon juice provides the best flavor.
  • Angel hair pasta is traditional, but linguine or thin spaghetti also work well.
  • Chicken broth can replace white wine if preferred.
