Total Time:15 minutes
Yield:2 servings
Ingredients
For the Sandwich
4 slices sourdough bread
4 slices white cheddar cheese
4 slices mild cheddar or mozzarella cheese
1/2 cup shredded mozzarella, optional
1/4 cup shredded Parmesan cheese
For the Parmesan Butter
2 tablespoons unsalted butter, softened
1 tablespoon finely grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
Pinch of salt
Pinch of black pepper
Instructions
Prepare the Parmesan butter: In a small bowl, mix softened butter, Parmesan cheese, garlic powder, dried parsley, salt, and black pepper until smooth and well combined.
Prepare the bread: Place the sourdough slices on a clean work surface. Spread the Parmesan butter evenly over one side of each slice.
Add the cheese: Turn two bread slices over so the unbuttered sides face up. Layer the white cheddar and mozzarella or mild cheddar evenly over the bread.
Assemble the sandwiches: Place the remaining bread slices on top with the buttered sides facing outward. Press gently to hold the sandwiches together.
Heat the skillet: Place a nonstick skillet over medium-low to medium heat and let it warm for about 1 minute.
Grill the first side: Place the sandwiches in the skillet and cook for 3 to 5 minutes, or until the bottom is crisp and golden brown.
Flip and cook: Carefully flip each sandwich with a spatula. Cook the other side for another 3 to 5 minutes until golden and the cheese is completely melted.
Melt the cheese: If the bread is browning too quickly while the cheese is still firm, reduce the heat and cover the skillet for 30 to 60 seconds.
Rest and serve: Transfer the sandwiches to a cutting board and let them rest for about 1 minute. Slice diagonally and serve hot.
Notes
Use sturdy sourdough bread for the best texture.
Softened butter spreads more evenly than melted butter.
Don’t use high heat, as the bread can burn before the cheese melts.
White cheddar and mozzarella create a flavorful and creamy cheese combination.
For an extra-crispy crust, sprinkle a small amount of Parmesan over the buttered bread before grilling.
Serve immediately for the crispiest bread and gooey center.
