For the Fries

  • 2 large russet potatoes
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • ½ teaspoon salt

Optional Nacho Cheese Sauce

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • ¾ cup whole milk
  • 1 cup shredded cheddar cheese
  • ¼ teaspoon paprika
  • Pinch of cayenne pepper
  • Salt to taste

Instructions

  1. Peel and cut the potatoes into thin fries.
  2. Soak the fries in cold water for 30 minutes, then drain and pat completely dry.
  3. Toss the potatoes with vegetable oil and cornstarch.
  4. Bake at 425°F (220°C) for 18 to 22 minutes or air fry at 400°F (200°C) for 15 to 18 minutes until crispy.
  5. While the fries cook, combine all seasoning ingredients in a small bowl and mix well.
